BBQ chicken quesadillas are a quick, flavour-packed meal that’s perfect for busy weekdays. Tender chicken and diced vegetables coated in smoky, sweet barbecue sauce is layered with melted cheese inside a golden, crispy tortilla. They’re a great way to use up leftover chicken, turning simple ingredients into a warm, gooey, and satisfying dish everyone will love.
Ingredients:
- 3 cups cooked, shredded chicken
- 1 cup bbq sauce
- 1 sweet pepper, any color, diced
- 1 small red onion, diced fine
- 2 cups shredded mozzarella cheese
- 6 large tortilla's
Directions:
- Place a large baking tray in the oven and preheat at lowest setting.
- Spread bbq sauce even over the tortilla's.
- Sprinkle half the cheese over half of each tortilla, deviding evening amongst the 6 tortilla's. Top cheese with chicken and vegetables.
- Top with the remaining cheese then fold unfilled tortilla half over the filling.
- Heat a large skillet over medium heat. Add a drizzle of oil to the pan, then carefully place one quesadilla into the pan. Cook, 3-4 minutes until underside is golden. Carefully flip, using a large spatula, then continue cooking for an additional 3 minutes until golden and cheese is melted.
- Place cooked quesadilla on warmed baking tray in oven to keep warm.
- Repeat cooking process with remaining quesadilla's.
- Serve with sour cream or a simple pico de gallo or salsa.

The preheated baking tray will prevent the quesadilla's from getting soggy while you are cooking the remainder.
