Serves 2 as a main, 4 as a side
Crisp kale and colourful vegetables come together to create a satisfying texture, while tender imitation crab adds a light, savoury touch. The soy and tamarind dressing brings the perfect balance of sweet, tangy, and umami, coating every bite with a bright, zesty finish. It’s a refreshing yet hearty salad that works beautifully as a light meal or a standout side.
Ingredients:
Dressing:
- 1 ½ Tbsp raw honey
- 1 Tbsp medium soy sauce
- 1 Tbsp grapeseed oil
- 2 tsp tamarind paste
- 2 tsp mayo
- 1/8 tsp salt
- Pinch of freshly ground black pepper
- Pinch of garlic powder
Salad:
- 2 cups chopped kale
- 8 cherry tomatoes, halved
- ¼ red onion, sliced thin
- ¼ sweet pepper, sliced
- 4-inch piece English cucumber, seeded and sliced
- 2 Tbsp fried onions
- 200g imitation crab
Directions:
- Add all dressing ingredients in a jar, screw on lid tightly and shake until combined. Set aside.
- Toss all vegetables together, then sprinkle the fried onions and crab over top. Drizzle with dressing.
- Imitation crab is readily available at all major grocery stores. However, if you can get fresh crab it would be so much better!
