Serves 6-8
Advocaat is a traditional Dutch cocktail-dessert readily available in supermarkets throughout the country. This home-made version is far superior to any store-bought variety and is so simple to make. I like to put it in a pretty jar and give as a gift to those "difficult to buy for" people. It’s delicious topped with whipped cream or spooned over ice cream for an extra treat. Traditionally made with brandewijn, it’s just as enjoyable prepared with other clear liquors as well (see note).
Ingredients:
- 12 egg yolks
- 1 1/2 cups white sugar
- 1 1/2 cups brandewijn (see note)
Directions:
- Whisk all ingredients together in a medium sized heavy-bottomed sauce pan.
- Heat over medium heat, stirring constantly with a rubber spatula until the mixture starts to thicken. It should coat the back of a steel spoon.
- Remove from heat, pour through a fine sieve into a glass jar. Store, sealed, in the refrigerator for up to a week.
- Brandewijn is difficult to find outside of the Netherlands. Replace with gin for a softer flavor or vodka for a sharper flavor.
