Quick & Easy Asian Noodles

Serves 4

When the craving for Asian flavours hits, these quick and easy noodles deliver. Fresh vegetables, fast-cooking noodles, and a simple yet flavourful sauce made from just a few common ingredients. Perfect for lunch or dinner, it’s a satisfying meal you can have on the table in under 15 minutes.

Ingredients:

 

  • 3 Tbsp medium soy sauce
  • 1 tsp hoisin sauce
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp ginger
  • ¼ tsp chili powder

 

  • 250g thin egg noodles (mie noodles)
  • 1 tsp + 2 Tbsp sesame oil, divided
  • 3 large white mushrooms, sliced thinly
  • 1 small yellow onion, diced fine
  • 3 celery stalks, sliced thin
  • ½ capsicum, seeded & sliced thinly
  • 2 carrots, shredded
  • 6 bunches of baby bok choy, leaves only, sliced thin.
  • 5 eggs, whisked together

Directions:

 

  1. Combine soy sauce, hoisin and spices together in a small bowl. Set aside.
  2. Cook noodles according to package directions. Drain. Add 1 tsp sesame oil, toss to coat noodles. Set aside.
  3. Meanwhile, heat remaining 2 Tbsp sesame oil in a large skillet over medium-high heat. Add mushroom, onion, celery and capsicum to the pan. Fry, stirring often, until tender. Add shredded carrot and bok choy leaves and continue to fry until bok choy begins to wilt.
  4. Push vegetables to the side. Add whisked eggs to the pan. Scramble fry until cooked through, then combine with vegetables.
  5. Add cooked noodles and sauce to the pan, toss to combine all and heat through.

 

  1. For a more filling dinner, add cooked chicken, shrimp or tofu in step 5.
