Indulgent Black Bean Squares

Makes 16 squares

These black bean squares are like chocolate cake’s sneaky, protein-packed cousin—soft, rich, and totally indulgent. Packed with flavor and zero guesswork (except maybe what the secret ingredient is!), they’re the perfect treat to sneak into any snack time.

Ingredients:

 

  • 250g cooked black beans (1 can black beans, drained and rinsed)
  • 150g white sugar
  • 55g butter, melted
  • 50g cocoa
  • 3 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 25g chopped pecans, optional

 

Directions:

 

  1. Preheat oven to 180°C.
  2. Line a 20cm square (8”x8”) baking dish with parchment paper.
  3. Put all ingredients except pecans in a large blender. Blend until smooth, scraping down the edges a couple times.
  4. Pour batter into the prepared baking dish. Sprinkle the chopped pecans over top.
  5. Bake in preheated oven for 30 minutes.
  6. Remove from oven and allow to cool completely.  Amp it up to dessert status with a generous spoonful of Greek yogurt and a drizzle of maple syrup.
