Makes 16 squares
These black bean squares are like chocolate cake’s sneaky, protein-packed cousin—soft, rich, and totally indulgent. Packed with flavor and zero guesswork (except maybe what the secret ingredient is!), they’re the perfect treat to sneak into any snack time.
Ingredients:
- 250g cooked black beans (1 can black beans, drained and rinsed)
- 150g white sugar
- 55g butter, melted
- 50g cocoa
- 3 eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- 25g chopped pecans, optional
Directions:
- Preheat oven to 180°C.
- Line a 20cm square (8”x8”) baking dish with parchment paper.
- Put all ingredients except pecans in a large blender. Blend until smooth, scraping down the edges a couple times.
- Pour batter into the prepared baking dish. Sprinkle the chopped pecans over top.
- Bake in preheated oven for 30 minutes.
- Remove from oven and allow to cool completely. Amp it up to dessert status with a generous spoonful of Greek yogurt and a drizzle of maple syrup.
